Emily Hester and her mother, Jami, opened this ice cream shop a few blocks from the beach on Coast Highway 101 in March 2017, partly as a way to give local teenagers and young adults job training. Everything is made from scratch, including the chocolate chip cookies, waffle cones, and sauces, and the dairy comes from pasture-raised cows at Straus Family Creamery rather than a wholesale supplier. Every scoop comes with a free browned-butter cookie, regular or gluten-free. The shop has also given away scoops to fund the Encinitas and Cardiff libraries' summer reading programs.
