In a backyard shed in Carlsbad, brothers Louie and Clinton Prager began baking bread by hand in 2012, using organic flour, water, natural leaven and sea salt. The business grew into shops in Carlsbad, Encinitas and San Diego, with the Encinitas storefront on South Coast Highway selling fresh sandwiches on its own bread alongside a rotating lineup of loaves. Baking follows a posted weekly schedule, since each variety needs its own fermentation time.
