A vodka distillery in Vista turns rescued bread and pastries from local anti-waste organizations into what the company calls the world's first carbon-negative consumer spirit. Most of the building was built by hand between 2018 and 2019 by the owners, family, and friends, and the finished room runs to leather chairs and custom wood paneling with what one local paper called a speakeasy feel. Weekends add live music and a food menu alongside the cocktail list, wine, and beer. The tasting room stays open into the evening most nights, closing earlier on Sundays.
