
Every server at Somm Time is a working sommelier, a detail owner Maria Rust built the wine bar around after opening it in 2016. The list leans toward natural and traditional producers from smaller regions rather than the usual big names, and the kitchen backs it up with a menu split into snacks, small plates, and large plates like slow-braised lamb belly and a daily pasta. It's meant to flex from a quick glass and a snack to a full sit-down dinner. The bar now runs out of a Lower East Side space on Broome Street.
