Verise

Riccardo Bilotta, who trained in kitchens in Tuscany and in Girona, Spain, opened Verise inside Carlsbad's Hotel Solea in April 2026 with chef de cuisine Kevin Martinez. Pasta is made by hand each morning for dishes like spaghetti al pomodoro with burrata and rigatoncini cacio e pepe, and the wood-fired oven turns out pizza alongside a Mediterranean octopus plate with cannellini beans and salsa verde. Aperitivo-style cocktails run before dinner in a room built to feel like a trattoria, open enough for a quick pizza and wine or a full sit-down meal.
