
Pietro Busalacchi, who also runs Trattoria Don Pietro and El Sueño, built Doc Holliday's around the gunslinger's aristocrat-meets-outlaw reputation: leather booths, dark wood and dim lights inside a room in Old Town that once housed Taco Loco. Cocktails come poured tableside from flasks, alongside milkshakes and dirty sodas, next to a menu of lobster mac and cheese, smashburgers, and a thick-cut Angus ribeye. Trivia runs Wednesday nights, and the doors stay open from morning coffee through last call near midnight.
