
A third-generation chef from Paris, Christophe Cevasco spent about a decade as managing partner of Eddie V's Prime Seafood in La Jolla before opening his own place, which he calls "flip-flop fine dining." The global Mediterranean menu leans on ingredients from local farms (organic lamb, sushi-grade salmon, imported cheese and salumi) turned into dishes like pepper-crusted yellowfin tuna over a watermelon salad. Honey from Cevasco's own beehives shows up in cocktails and desserts. A hidden bar called The Hive sits behind the dining room, reachable only by finding its door.
