
Einat Admony reopened Balaboosta, once a Nolita mainstay, inside the former Bar Bolonat space on Hudson Street, bringing modern Israeli cooking shaped by her Persian and Yemenite family background. Her husband, Stefan Nafziger, built the wine list to match. The kitchen leans toward small plates like a creamy hummus and cauliflower with peanut tahini, alongside pricier entrees such as octopus with lamb belly and a pomegranate-heavy chicken dish. Reservations run through Resy for dinner Tuesday through Sunday, with brunch added on weekends.
