Chef Maxime Pradie cooks from his Franco-Italian roots at this Bedford Street bistro, which opened at the end of 2024 with a menu built around homestyle dishes from the south of France. Half-curtains hang in the windows, letting light into the small dining room while keeping the sidewalk from seeing in. The pissaladiere comes topped with olives and anchovies on a flatbread base, and a pork collar dish pairs hazelnut and dandelion greens with a shallot jus. Dessert leans on a chocolate cremeux finished with creme anglaise and orange.
