
Milka and Romeo built Ras around a reworking of Ethiopian cooking rather than a straight retelling of it, and Milka has been named a James Beard Award semifinalist for her cooking. The mushroom tibs come charred at the edges and full of flavor, a highlight of platters meant to be scooped up by hand rather than eaten with silverware. The dining room stays dark, with one long bar usually lined with well-dressed couples and walls painted with portraits of Haile Selassie, while the back patio runs brighter and louder under string lights with an R&B soundtrack. The kitchen is also kosher certified and handles catering on the side.
