Gabriel Kreuther, whose eponymous restaurant nearby holds two Michelin stars, opened this 5,000-square-foot Alsatian brasserie on the ground floor of the Spiral at Hudson Yards, seating 145 across a dining room, bar and open kitchen built around wood-fired grills. The kitchen burns oak, cherry and apple wood for dishes like an Alsatian beer soup with shrimp and venison cured in juniper. A private dining room modeled on a luxury European train car adds brass fittings and gold tones for larger groups.
