Fifteen stools line a black stone counter inside a former barbershop off the 32nd Street entrance to the Herald Square subway station, behind a door that only opens with a code sent the day of your reservation. The ten-course tasting menu leans hard on seafood: a scallop custard topped with caviar, a barbecued squab course, freshwater trout in a citrus sauce. The kitchen holds a Michelin star and works in tweezers almost as much as it cooks, plating foams and gels alongside a handful of edible flowers. Reservations open on Resy thirty days out at noon, and the meal itself runs close to two and a half hours.
