Two grandsons of Mexico City chef Carmen "Titita" Ramirez Degollado opened this Flatiron spot in 2023 to carry her El Bajio recipes north, in a 74-seat room built to feel like a small-town casona — wooden beams, volcanic stone carvings, walls thick with texture. Dinner runs to duck tostada, plantain empanadas and enchiladas de mole made to her original recipe; weekend brunch adds chilaquiles and huevos rancheros.
