
Chef India Doris, who won the Michelin Guide's 2025 Northeast Cities Young Chef Award, built Markette's menu from her own background: raised in London with Jamaican and Guyanese roots, then trained through kitchens in Normandy, Spain, and London's La Trompette and Bibendum before New York's SAGA and Crown Shy. The Chelsea dining room runs deep green, orange and gold, with a long bar on one side and booths on the other, lit by daylight through the glass doors at the front. Coconut milk, curry leaves and scotch bonnet peppers turn up across dishes like salt cod fritters and braised oxtail gratin. A staircase in back leads down to the Argyle, a speakeasy-style cocktail room that opened later the same year.
