
The roof of Grimm Artisanal Ales in East Williamsburg holds Lala's, run by the brewery's own Joe and Lauren Grimm, who spent years reworking classic apizza dough into their own version: malted wheat and a sourdough starter cultured from their own beer. The pies come out thin with a caramelized, charred crust, and the ones to order are the clam pie or the Cozy Pie, topped with mashed potatoes, bacon and pickled cherry tomatoes. Up top, the view runs over Brooklyn and Queens, and the sunset alone is worth staying for a second round.
