Behind a flower-shaped neon sign on Spring Street, an elevator carries guests to the eighth floor of a preserved early-1900s office building, where Florentín keeps a Mediterranean-leaned rooftop going late into the night. The kitchen stays minimal, just pizza and a few snacks, while the bar does the heavy lifting with dessert-like cocktails like a mango sticky rice milk punch. By 11pm a DJ has people dancing near the entrance, so arriving early is the way to actually sit down.
