Inside a strip called the Brickwalk in Rolling Hills Estates, owner Jeff Rinna rebuilds the wine menu every two months around three small producers from a single region, aiming for the feel of tasting through a handful of wineries in one sitting. Chef Aaron Esquibel, previously of the Michelin-starred Orsa & Winston, changes the food on a slower cycle: shared plates of pickled and fresh mushroom risotto cakes, roasted heirloom carrots with labneh, and boquerones, then entrees like saffron risotto with grilled prawns. Beer and soft drinks are poured too, for anyone at the table who skips wine.
