No printed wine list exists at this Hollywood Boulevard bar, opened in 2010 by Dustin Lancaster and wine director Matthew Kaner: staff ask what mood a guest is in and pour from dozens of bottles open at once until something fits. Snacks run to a charcuterie board built for splitting. Bartenders walk each guest through several pours before landing on one they like.
