
Nine floors up at Hotel Indigo in the Gaslamp Quarter, Borrego Kitchen & Cocktails took over the old Level 9 Rooftop Bar space with a view that runs from the downtown skyline down into Petco Park. The kitchen, built around a desert theme drawn from California's Borrego badlands, works shareable plates like hibiscus-cured kanpachi, cochinita sliders of slow-roasted pork, and roasted halibut with chimichurri, while a cocktail program from Lowder Tascarella Hospitality covers the bar. Seating runs from stools along the glass rail to fire-pit lounge areas, with an indoor section behind sliding doors for when the weather turns.
