Inside Neighborhood in the East Village, a wall of stacked beer kegs near the restrooms hides Noble Experiment, a gothic-toned bar with white booths, a bejeweled chandelier and a wall of brass skulls behind the taps. Farther back, a door built into a false refrigerator leads to Young Blood, a thirty-seat room where a server walks guests through a three-course cocktail tasting, with the middle course built to each guest's taste. Noble Experiment runs on a nightly walk-in list; Young Blood takes reservations only.
