Quantum Brewing

Martin Beaulieu bought this Kearny Mesa brewery from founder Dylan Wallace in 2016 and grew it from a one-barrel rig to a three-barrel setup before selling it in 2025 to Taylor Scheid, a former Navy helicopter rescue swimmer who'd been a regular drinking Pale's Constant, his favorite of the house pale ales. Beaulieu stayed on as a bartender and mentored Scheid through the recipes, and the two now barrel-age the darker beers and test gluten-reducing batches on a science-themed lineup that includes a Gravity Well Imperial Stout. Dogs and families are welcome at the taproom, and outside food is allowed in.
