Above Huntress steakhouse in the Gaslamp Quarter, this 5,000-square-foot rooftop is chef Akira Back's Nikkei-influenced sushi restaurant, pairing Japanese technique with local ingredients. The signature nazo box arrives as a wooden case etched with the chef's likeness; opening it releases a cloud of vapor over nine compartments of sushi in different sauces and roe. A separate nine-course omakase moves through dishes like albacore in tosazu sauce and Baja bluefin toro. A sake flight program runs alongside the cocktail list, and Mondays bring discounted items for locals.
