In Encinitas, a working farm anchors Fox Point Farms, a regenerative dining and event complex whose restaurant serves whatever's just been harvested: a Foxy Greens salad made from six lettuces grown there, carrots al pastor, kohlrabi fries and a bison burger with tomato jam. Chef de cuisine Kelston Moore, previously a yacht chef, runs the kitchen with a zero-waste approach and Caribbean influences inside a barn-like dining room built with reclaimed teak. The property also holds a taco stand, an on-site brewery and a coffee roaster.
