A tachinomi-style standing-room bar drawing on Japan's casual, drink-only taverns, Dokidoki is the first collaboration between bartenders A-K Hada and Christian Suzuki-Orellana, known as Suzu, one of whom cut his teeth at PDT. Nearly every cocktail here comes in lower-ABV than a standard martini, including the Tropic Hai and the Shibuya Cafecito. Chef Daniel Maysonet built the food menu by running Puerto Rican and Salvadoran flavors through Japanese technique, turning out crispy pork belly with yuzu kosho and tamarind, and a cod katsu sando. The name itself is Japanese onomatopoeia for a fast-beating heart, chosen to match the room's energy.
