
A hidden bar sits behind an unmarked staircase inside Jajaja Mexicana at 63 Carmine Street, one of the only NYC bars devoted to Mexican fermented drinks. The candlelit room seats 50 across original stone walls, curved velvet banquettes, and a copper bar, with cocktails split between classics, fermented pours, and originals like a mushroom-bourbon Nueva Moda. Every dish, from watermelon ceviche tacos to mushroom empanadas, carries an Orthodox kosher certification. It opens only Thursday through Saturday.
