A pre-war cellar under a patisserie on West 23rd Street houses Thyme Bar, in a space that once ran as a speakeasy and gambling den in the 1920s. The multi-course tasting menu pairs cocktails with small plates like Berkshire pork belly sliders and a dessert course, alongside a full list of botanical, garnish-heavy drinks by the glass. The kitchen runs until 11pm and snacks are available all night. It's closed Sundays and Mondays, with reservations through Resy the rest of the week.
