
Dona Murad, whose family baking traditions run through Bahrain and India, opened this Cooper Square bakery with partner Andre Gerschel, folding Danish lamination techniques and regional spices like loomi, za'atar and sumac into the pastry case. The pistachio rose croissant draws a line before opening, and the babka bun swaps in a loomi-spiked lemon curd for chocolate. Savory options include a Marmite cheddar morning bun and a Jerusalem bagel. Regulars now treat the morning wait outside as part of the routine.
