
Sother Teague and Ravi DeRossi opened this East Village bar in 2011 as the first in the country built entirely around bitters and amari, and shelves of both still line the walls behind a penny-tile counter. There's barely room to sit: a few stools ring the bar and everyone else stands, cocktail in hand, talking through the seasonal list with whoever's pouring. It fills up fast on weekends, and there's no taking reservations.
