A former torpedo factory under the Manhattan Bridge in Dumbo holds Kinjo, keeping the building's exposed brick and century-old wood beams around a stone bar and leather banquette. Chef Johnny Huang, previously of Masa, runs an 11-course omakase counter that seats around a dozen. Booking goes through Resy, up to 28 days out. The adjoining lounge takes walk-ins for cocktails built on Asian spirits, among them a yuzu negroni, plus a sake made in partnership with Brooklyn Kura.
