A flowchart on the menu steers guests toward something fruity or zesty, bitter or herbal, instead of a standard drink list. Tap handles are topped with porcelain doll heads salvaged from a 19th-century German doll factory, and cocktails come cheap enough to order a flight rather than commit to one.
