Nomad brewer Jeppe Jarnit-Bjærgsø, the founder of Evil Twin Brewing, opened this Greenpoint beer bar with former Noma and Momofuku chef Daniel Burns, and it still runs on their custom "flux capacitor" system, which lets staff dial each of the 21 draft lines to its own gas blend and pour temperature. The room is reclaimed wood and white marble, closer to a Scandinavian cabin than a beer hall. Burns's kitchen sends out warm grainy Danish rye with cheese and a burger regulars keep coming back for, alongside 200-plus bottled and canned beers.
