Hervé Poussot, a pastry veteran of Le Bernardin and Payard, runs this DUMBO bakery on a cobblestone block near the Brooklyn Bridge. The case holds baguettes, fruit tarts, madeleines, macarons, and meringues nearly the size of a shoe, alongside soufflé-like quiches and sandwiches for the lunch crowd. A few marble tables seat the in-house crowd; most people just carry their order to the park.
