Chef Ginger Pierce returned to California in 2021 after 17 years cooking in New York, including a stint with Jonathan Waxman at Barbuto, before taking over the kitchen at this lounge on the ground floor of 1 Hotel West Hollywood. A garden addition turned the space indoor-outdoor, and much of what lands on the table, like stuffed California dates with smoked bacon and goat cheese or a bone marrow burger on a sesame-potato roll, comes from the hotel's own organic garden. The bar list runs to biodynamic wines, local craft beer, and zero-proof drinks, alongside a rotating schedule of live DJ sessions.
