
Arturo Enciso, a self-taught baker, and his partner Ana Belén Salatino opened Gusto Bread's storefront on Retro Row in 2020, building sourdough and nixtamalized corn into a menu that includes concha made with sourdough starter and a laminated masa pastry called the Nixtamal Queen. The bakery uses a sourdough culture instead of commercial yeast, which the owners say gives the bread its flavor. It's open Wednesday through Friday from 8am to 4pm and weekends from 8am to 2pm.
