Chef Michael Cimarusti opened Providence in 2005 in the former Patina space on Melrose Avenue, after turning down a role at Patina's Walt Disney Concert Hall location. A 2023 redesign brought hand-blown glass installations and walls painted through eight shades of blue, green and sand for an ombre effect, and the restaurant still keeps a rooftop garden with herbs and Italian honeybees. What began as two tasting menus split by coastline has narrowed to one menu plus a vegetarian option, and the restaurant earned a third Michelin star in 2025.
