The back room, called Research & Development, hands its bar to a different guest bartender every night, so what gets poured there changes while the front bar keeps its own list of house drinks. Bands, DJs and burlesque takeovers fill most nights on the calendar, under the Houston Brothers' ownership. The door discourages shorts, flip flops, logos, loud colors and most hats.
