Roughly 12,000 square feet inside The Guild Hotel on Broadway hold Zuma's San Diego outpost, its first in California and the brand's sixth in the U.S. since it started in London in 2002. Three kitchens run the room: a robata grill, a sushi counter and a hot kitchen turning out dishes like miso black cod and spicy beef tenderloin. Seating for about 220 spreads across the dining room, a wraparound bar, a garden terrace and a dedicated DJ booth.
