What opened in 1915 as Caffe Dante, an Italian coffeehouse, is now a candlelit cocktail bar with bouncy banquettes and a Negroni built for volume: the house version comes kept on tap with a sharp bitter edge. Vermouth service arrives chilled in a stemmed glass with frozen grapes as the garnish, and the kitchen turns out steaming orecchiette with broccolini and crumbled sausage. Reserve a table and you're required to order food; walk in and you can skip it, though seats are harder to find. The World's 50 Best Bars named it the best in the world in 2019.
