
Each seat at this Glendale shabu shabu counter has its own burner and pot. Order a platter of thinly sliced beef, pork or chicken, a vegetable plate, or the sukiyaki with a raw egg cracked over it; egg noodles, more vegetables, soy sauce and ponzu come alongside. The broth is dashi unless you ask for the Tokyo Spice, which gets its heat from jalapeño and garlic, and there's chili oil and garlic for seasoning your own pot. Staff behind the counter walk first-timers through it.
