
By day you order at the pastry counter, often after a line out the door onto La Brea, and take croissants to long tables in the building's interior courtyard. Charlie Chaplin put the building up in the late 1920s, and it later housed La Brea Bakery and Campanile. Walter and Margarita Manzke opened République here in 2013, and her baking won the James Beard award for Outstanding Pastry Chef or Baker in 2023. Dinner is a separate visit: book ahead for the dining room at the back, where the French menu changes daily.
