Executive chef John Hans Yeo built the menu at this Old Town sushi restaurant around single ingredients enhanced rather than masked, a squeeze of lemon and yuzu paste on Japanese snapper, gold flakes and black caviar over a slice of Spanish bluefin toro. Traditional sushi and maki share the menu with fusion dishes like wagyu beef tacos in wonton-crisp shells, served under a glass case housing three suits of samurai armor. Owner Tigran Oganessian opened the restaurant in February 2020, weeks before pandemic shutdowns.
