
A carpeted hallway lined with chandeliers and an elevator ride lead up to this fine-dining room atop the Fairmont Breakers hotel, open since 1938 and rebuilt for its current run. Inside, a gold, cylinder-strung chandelier wraps the ceiling, with clouds hand-painted across it in black. The kitchen sends out uni toast and crab cake before Beef Wellington and classics like Bananas Foster and Baked Alaska, and the old dance floor and bandstand are gone, replaced with more tables.
