Chef Jose Carles, known for Fonda Lo Que Hay in Panama City, opened this Caribbean and Central American seafood restaurant in 2023 in the space that was once James Beach, a nightclub known for its dance floor and fish tacos. Seashell chandeliers hang over green booths, and a semi-enclosed patio thick with bird of paradise plants leads to a bungalow bar in back. The kitchen sends out kanpachi wrapped in banana leaf with Thai basil paste, a surf clam ceviche, and a Dungeness crab stew. Reservations run through Resy, and parking nearby is tight.
