
Jason Kaplan spent a year and a half baking a dozen bagels a day before opening this takeout counter on the border of Silver Lake and Echo Park. The sourdough bagels are boiled and baked in small batches all day, then loaded with house schmears and smoked fish; the Everything and garlic are standbys, and the Mori piles on lox, dill, cucumber and wasabi tobiko. Bagels don't get toasted unless you ask, and the line at this residential-street shop moves fast.
