
Jeff and Christa Duggan, who built the Portola Coffee roastery, opened this distillery, bar and 50-seat restaurant in Anaheim around an experiment: whiskey aged to different genres of music comes out tasting different, so barrels here mature to rock, jazz, blues or country soundtracks. Bar director Matt Fitzgerald builds the cocktail list from the house spirits, naming drinks after songs and albums, while the kitchen serves Spanish octopus, Prince Edward Island mussels and a brioche burger with black garlic aioli. A whiskey flight offers four half-ounce pours of the different blends.
